Choosing a convection oven really begins with a list of the things you will be cooking within in. If you just need it for a few minor things, you don't need an overly powerful oven. But if you're cooking and baking constantly, you might want to choose something that's a little heavier duty. Your oven should have a wide range of cooking temperatures, preferably up to 600F, if possible. This way, you can cook something at a higher temperature without troubles.

Though the size of your kitchen is going to determine how big your convection oven can be, you do want to choose something that's larger than a traditional oven. This will allow for more versatility with the dishes you cook, while also helping you cook more at once. Try to also find an oven whose racks easily slide out and can be rearranged, as this will also help you adjust to your ever changing needs. If you can, try to find out if you can fit your current baking pans in the oven before you buy it to be certain you don't heat the oven up, only to realize nothing fits. When in doubt, bigger is better.

You also want to make sure your convection oven can handle broiling, especially when you want to cook meats instead of breads. This will help to get the entire meal cooked thoroughly without sacrificing any of the taste. Check to see what other controls are available as you want to make sure you have multiple options for your multiple menu choices.

Other things to keep in mind:

- Check to see how long the warranty is -- Should something happen, you want to be certain you can get the oven replaced or repaired.
- Ask other restaurants what brands they use.
- Electronic controls are easier, but can be trickier to fix.

With a high quality convection oven, you will make sure that each customer is happy with their meal each and every time.
