With a growing number of people resorting to home canning and preserving methods nowadays, home canning has gained immense popularity.

It is a perfect way to preserve food and the time and energy utilized is worthwhile as the food preserved is healthy, nutritious and free from additives.

Home canning:
Canning is a food preservation method whereby food is packed in jars , which are immersed either in a water bath or pressure canner and allowed to heat for a specific time period at a certain temperature. The kind of canner used, temperature and the time period of processing depends upon the type of food to be preserved.

When you preserve fish or meat in metal tins, it is also a kind of home canning, however it requires some special appliances to seal the lid of canning tins. This type of canning is difficult and hence not as popular as jar canning.

Heating and maintaining pressure is a part of canning process as it prevents harmful bacteria from spoiling the food and leading to health problems.

When the canning period is over, you can safely remove the jar to allow it to cool resulting in the formation of a vacuum whereby the air escapes out of the jar causing the jar to be airtight. The sealed jar is beneficial in preventing any deterioration or spoilage of food.

Guidelines for safe canning:
It is important to know the type of canner required for the different food items to be preserved. Moreover you should strictly adhere to the canning and safety guidelines in order to preserve nutritious and healthy food.

Foods like fruits, fruit juices, jams, pickles and tomatoes can be processed in a water bath canner. Vegetables, meats, fish and poultry are low acid foods and can be processed in a regulated pressure canner. Canning jars are made up of tempered glass with a proper seal should be utilized for the purpose.

Canning equipments funnels, apple corers and cherry pitters are a great help for the canning process, however jar lifters, jars, canner racks, timers and tongs are essential for the process.

Be organized:
It is important to stay organized while canning. Be careful of the time while canning as your main aim is to get the food processed as quickly as possible and protect it from the risk of bacteria and deterioration.
