Cortlands - A Great Baking Apple
I always wondered how to choose a great baking apple. I mean, what really should I look for? Well a great baking apple has two important characteristics: a tough outer skin and a mixed taste. What is a mixed taste? It is sweet and tart.
A great apple available in the fall is the Cortland apple. It is a perfect baking apple as it possesses the tough skin as well as the sweet and tart taste.
Cortland Apples were a cross breed apple. It came to be at the New York State Agricultural Experiment Station 1898.
The apple gets its name from two sources. The first, Cortland County, New York. And the second, a Mr. Pierre Van Cortlandt.
Mr. Cortlandt was the president of the convention that wrote the 1st New York State constitution. He also was the first lieutenant governor as well.
Being a juicy apple, makes Cortland apples great for anything. Being sweet and tart also does too. The flesh of this apple is white where as others tend to be yellow in nature.
Cortlands can be great served with crackers and cheese on a platter for example or on a kabob of fruit. They also can be great in fruit salad, adding their own unique flavor to the dishes.
Picking a great apple can be a bit confusing to some but it is not really. Just place the apple in your palm. Do not squish it with your thumb but feel for firmness and if it feels heavy.
At the grocer, make sure your apple's skin does not wrinkle too, as it may have been kept in storage too long or not have been cold storage at all.
To keep your apples fresh is easy. Keep them cold in your refrigerator. Freezing will not happen unless the temperatures go below 28F.
If you want to keep your slices looking fresh, or your kabobs, rub lemon juice on the apple pieces before serving them. It will keep them from discoloring so fast.
Best way to enjoy this great apple to me is fresh off the tree, so take your kids to your local orchard to pick the apples. It is fun and my girls love it. ENJOY!
