For a start they allow you the total freedom to stick with your own timetable. The problem with hotels and B&Bs is that they have specific times at which you have to go and have breakfast or dinner. If you are on a budget it's certainly cheaper to cook many evening meals in your cottage, as you chat about the day's events and decide what you'll be doing the very next day.
